NO (April) FOOLIN’ This Soup is Delicious!

HI EVERYONE!

I don’t usually do recipe thingies right at the top, but I (and several of our good customers) have a mutual love for Leek Soup, and I wanted to tell you about it. First of all what, you may ask, is a Leek? Well, it’s sorta like a Green Onion on steroids. Big, but milder. It imparts a wonderful base flavor to soups and here’s 2 ways to try it.

POTATO-LEEK SOUP from The Thug Kitchen cookbook (x-rated but funny): 3 med.-large potatoes, 6-8 Baby Leeks (LEILANI’S), an elephant garlic clove, 4 cups broth (chicken or vegetable), salt, pepper, and a little fresh Chives and Dill (plants at LEILANI’S). Put a little oil in a big pot, chop up the white parts of the Leeks and saute’ 3-4 minutes, add cubed potatoes and minced garlic and stir 2 minutes, add broth and salt, boil then simmer covered 15 minutes. Blend it all until creamy, add chives then salt & pepper to taste, and finally a little fresh Dill to taste. Yum.

MY FAVORITE VARIATION: Skip the potatoes (or not), do a whole bag of LEILANI’S Baby Leeks and 2 elephant garlic cloves, saute’, add 3 cups of broth, simmer uncovered for 30 minutes to reduce volume. Blend, put back in the pot and add a full pint of Heavy Whipping Cream! Add the chives, salt, pepper, a little dill, warm up a Sourdough Round from MY DAILY BREAD with plenty of butter, and make a spectacle of yourself (at least that’s what I do and I ain’t apologizin’!
